Habanero Hot Sauce Recipe

This habanero hot sauce recipe goes well with just about everything. Try it on grilled pork or beef, vegetables and fish.

  • 14 habanero chiles
  • 12 peeled garlic cloves
  • 8 green onions coarsely chopped
  • 1 carrot sliced
  • 3/4 cup cilantro sprigs
  • 2 tablespoons thyme leaves
  • 3/4 cup white vinegar
  • 3/4 cup water
  • 1/4 cup yellow mustard
  • 1/2 teaspoon ground allspice
  • 1 tablespoon Kosher salt


  • Bring a large saucepan of water to a boil. Set a strainer in the pot and add 14 habanero chiles. Blanch for 30 seconds. Transfer chiles to a plate and add 12 peeled garlic cloves, 8 coarsely chopped green onions and one sliced carrot to the strainer and blanch for 30 seconds; transfer to a blender.
  • Add 3/4 cup cilantro sprigs and 2 tablespoons thyme leaves to the strainer and blanch for 10 seconds; scrape into the blender.
  • Wearing latex gloves, remove the stems and seeds from the chiles and transfer them to the blender. Add 3/4 cup white vinegar, 3/4 cup water, 1/2 cup yellow mustard, 1/2 teaspoon ground allspice and 1 tablespoon kosher salt to the blender. Pulse till it becomes a pourable sauce. Carefully transfer the hot sauce to sterilized bottles. Refrigerate for up to 6 months.
