Chinese Potato Sticks

These Chinese potato sticks are a take-off of the western french fries, however these are flavored with soy sauce and chili. Try these for a change of pace in your game day menu.Note: You can change the number of people served by placing your cursor over "Servings". The Ingredients will adjust to the new number of servings.

Ingredients

  • 1 1/2 pounds Russet potatoes
  • 1/2 cup vegetable oil
  • 1 red chili halved
  • 1 onion small, quartered
  • 2 cloves garlic halved
  • 2 tablespoons soy sauce
  • pinch of salt
  • 1 teaspoon wine vinegar
  • 1 tablespoon salt kosher
  • 1 pinch chili powder

Instructions

  • Peel the potatoes and cut into thin slices along their length.  Cut the slices into matchsticks.  Blanch the potato sticks in boiling water for 2 minutes and drain well. Dry on absorbent paper towels.
  • Heat the oil in a preheated wok until almost smoking.  Add the chili, onion and garlic to the wok and stir-fry for 30 seconds.  Remove and discard the chili, onion and garlic.
  • Add the potato sticks to the oil and fry for 3-4 minutes, or until golden.  Add the soy sauce, salt and vinegar, reduce the heat and fry for 1 further minute, or until the potatoes are crisp.   
  • Remove the potatoes with a slotted spoon and drain thoroughly on paper towels.  Sprinkle with salt and eat.
